Friends, this is the nectar of life. And it’s in a mason jar. On the B train. This is cold-brewed iced coffee, the pinnacle of iced coffee goodness. Cold-brewing is a technique where you combine coffee grounds with cold water, in a very different ratio than when you do it in your coffee maker, and allow it to sit for 8-12 hours to brew. This has many benefits. 1- it provides a very concentrated container of coffee 2- the lack of heat and slow steeping mean that you don’t get the bitterness that you can get from heating up coffee grounds. 3- you can get great taste, real depth, from some not so top of the line coffee, and something sublime from excellent coffee. To make cold-brewed iced coffee my way: Put 8 ounces(by volume- 1 cup) of medium-ground coffee in the bottom of a 1-quart container. I used Starbucks Espresso Roast, which has surprising depth and sweetness. Fill to the top with water. Cover, and let it sit in the fridge. I do this at night, and do the next step in the morning. In the morning, take out your jar/container, and grab a fine-mesh strainer. Pour the coffee goodness through the strainer into another container. Rinse out the jar, and strain the liquid back into it. You now have cold-brewed iced coffee concentrate. Congratulations!! To consume, put a few ice cubes in a glass (or your handy mason-jar-slash-travel-mug) and rejoice over the fact that these won’t water your coffee down too much because the coffee concentrate might be able to kick your ass, it’s so strong. Fill the glass about 2/3 full with the coffee concentrate, and add your sweetener of choice. Add some water, to dilute it a bit, and your dairy product of choice, if desired. Drink. Be happy. Happy Friday, friends.
