meatloaf | Ina Garten | always good! and super easy as well, just remember it takes a while to cook. i substitute for turkey meat, so mine is not as rich (or fattening) but even with turkey it has great flavor.
lemon chicken + artichokes | really good, added a couple elements for more flavor. used 3 chicken breasts, 1 package of artichokes, 1 1/2 cups asparagus cut 2 inches, 2 teaspoons capers. next time would add more seasoning to flour mixture, more crushed black pepper, cayenne pepper and garlic salt. really fast, tasty recipe.
hummus | alton brown | uses dried chickpeas - made the following adjustments to recipe. added quite a bit more water than recipe called for, probably about a total of 2 cups additionally, but just watch as you mix for desired texture. 2 tablespoons additional lemon juice. 1-2 additional garlic cloves, depending on size of cloves. kept basic, would add more lemon, garlic and salt if eating plain, but since i add specific seasonings each time, left as more of a base.
honey + garlic roasted chicken | this is SOOOO yummy!!! instead of whole chicken i used two chicken breasts, reduced the amount of veggies and added additional garlic since roasted garlic is so good. cooked for around 55-60 minutes since less chicken and veggies. so quick and so de-lish! yummmmy!
